Tofu Fun


I really enjoyed my first attempt at preparing new food for my 18-month old test subject and nephew, M. (Don't worry sister, I'll check with you before I feed him anything TOO crazy).


Marinated Tofu
3 to 4 Tbs. soy sauce
2 medium cloves garlic, minced
2 tsp. grated fresh ginger
1 Tbs. Chinese sesame oil
1 Tbs. vinegar (rice or cider)
1 to 2 tsp. honey (optional)

Mix well and pour over 2--12 oz. pkg. of X-tra Firm Silken Low Fat Tofu that have been cut into cubes.
She recommended boiling tofu for 10 minutes to help firm it up. I also so in my search freezing for 24 hrs and than pressing between paper towel and a cutting board for about 30 minutes gets more moisture out. I haven't tried that technique yet.

This recipe came from Grandma R. She prepared it for my cousin when he was a young boy. I tried a couple cubes and enjoyed them, but for an adult you would need to add it to something, like a salad. Don't be fooled by the powerful smell of the marinade. The flavor is great.

Another thing to try....after marinade, toss cube in cracker crumbers to make it easier for little fingers to grasp.
